The beauty of a well-styled seafood platter goes beyond good looks. While the thought of where to start may be somewhat overwhelming, here are a few tips to keep in mind that will help your platter planning.
1. Prepare ahead
Preparation is key, think about the number of people you will be entertaining, the platter you’ll be serving on and the ingredients you would like to use. Make sure you write yourself a list so you don’t miss a thing, and give yourself plenty of time, especially if you are including hot items.
2. Include fresh seafood
Place your seafood order ahead of time to make sure you don’t miss out, including all the favourites like oysters, prawns, smoked salmon and lobster.
3. Include interesting sauces and dressings like creamy aioli sauce, tartare sauce or poppyseed dressing.
4. Mix up the arrangement to make your platter pop, start with the larger pieces first, like lobster, crab and prawns and then fill in any gaps with oysters and wedges of lemon.
